Wine of the Week - Liberty School Cabernet Sauvignon by Christopher Walters
Produced with fruit from Paso Robles, which is home to the winery operated by Hope Family Wines, and other California appellations, the well-made Liberty School Cabernet reveals ripe casis, black cherry, peppery spice and dark chocolate aromas and flavours. The palate strikes a good balance between fleshy texture and firm tannins, which makes for a versatile wine that works well with or without a meal.

BEVX.com, December 2009
3 STARS - Deep, dark, bright ruby red color. The nose is explosively fruity with waves of raspberry, cherry, and plum leaping from the glass with hints of strawberry, cinnamon, blackberry, and chocolate. The palate is as fruity as the nose had advertised with layers of fresh crushed berries, brown spices, and sweet oak flavors. A nice “everyday” styled Cab.

Best cellars wine: 2004 Liberty School Cabernet Sauvignon
Liberty School is part of the Treana stable of wines.Year in and year out this wine consistently ranks as one of the best values going for a California Cabernet Sauvignon in the under $30 price range. It offers notes of black cherries and plums with a little licorice, backed by soft ripe tannins and a touch of oak. It would go well with grilled flank steak, Italian sausages and roast pork.

Paul Kirk, the baron of BBQ, gives the lowdown on brisket, chicken and his famous burnt ends.
WINE PAIRING: This intensely smoky brisket demands a wine with full-bodied fruit and fairly substantial tannins – like a Cabernet from Central California’s Paso Robles region, where the warm climate creates robust, generous reds. Look for the brambly blackberry 2004 Liberty School.

89 pts. Lots to like in this Cab. Few regions do a better job of ripening red wines than Paso Robles while keeping prices modest. This one is softly rich in blackberry and cherry flavors wrapped in fine, sweet tannins. This is a good price for a Cab of this quality. BEST BUY.

Five Stars - This is a dense, concentrated Cab that’s chock full of delicious flavours like black cherry and plum, spices and herbs. Dry, well-structured and with firm tannins, it’s a steak wine par excellence.
LOS ANGELES DAILY NEWS,
John Soloman
Cherry and mocha aromas give way to an earth and berry-flavored wine. Nice layers of herb, cedar and currants unfold beautifully. The tannins are soft and round. The finish is lively and solid with a dash of toasted oak. Serve with filet covered in a cabernet-sauce reduction.
THE COLORADO WINE NEWS, October – December 2005

"Editors Select 100 Great Wines under $15."
87 pts. Liberty School has a long history of providing value wines. Now owned by the Hope family (which also owns Treana and Austin Hope), it continues that tradition with this dry, balanced and elegant Cab, based on Paso Robles fruit. It's not a blockbuster, but the way the cherry and blackberry flavors interact with smoky oak and dried Provencal herbs makes the wine charming, and even complex.
